The queen of spices
Green cardamom grows on a tall plant of the ginger family. Its small green pods hold 15–20 dark seeds with one of the most fragrant aromas in the kitchen — and in the Gulf, coffee is traditionally brewed with it.
IFrom the Western Ghats
Cardamom is native to the evergreen forests of the Western Ghats in southern India; today Guatemala is the world's largest exporter. The pods are picked by hand while still green, once the seeds inside have darkened, and dried carefully so they keep their colour and their oil.
IICoffee and cardamom
In Arabic coffee, gahwa, cardamom is the essential spice: the coffee is brewed with it and poured in small cups as a sign of welcome, elders and guests first. In Turkey, cardamom coffee — kakuleli kahve — is one of the classic variations of Turkish coffee, alongside mastic.
IIIReady in the bag
No need to crack pods into the džezva: the cardamom is already in the bag. Grind it extra fine with the coffee just before brewing — the oils in both start to fade once ground — and brew it like any Turkish coffee.
